Cha’s away for a couple of days, so I was making tea for myself. Chicken schnitzel was easy, need veges to go with it.

Look in the fridge, gather up all the raggedy looking veges - half an onion, half a (small) cabbage, a couple of red capsicums, four carrots, some string beans.

Chopped the onion, put a tiny spray of olive oil in the pan, put the onion in, followed by the caps, then the finely-chopped cabbage, julienne the carrots and nuke them, then the same with the beans, add a couple of tins of chopped tomatoes, crank the hotplate to boil off some of the tomato fluid, and you’re away.

And HEAPS left over to go in the fridge for tomorrow or Sunday. Sweet.
